Growing up, Thanksgiving was always one of my favorite holidays. I remember turning my nose up at the cranberry sauce (I love homemade, now, though) and fighting with my cousin over the crispy skin from my mom’s homemade turkey.
As a kid, it never occurred to me that leftovers from such a huge bird might be a tad overwhelming for a family of four…
Savory Turkey Rice
Now, as a mom, I understand that using up all the leftover turkey after Thanksgiving can be a bit of a struggle. Sandwiches and reheated meat can grow old quickly. Of course, I have 6 kids, so we don’t usually have that much leftovers after any meal, but still, I’m always looking for new ways to use them when I have them.
One of my favorite ways to use up the gigantic bird is on top of a salad or in a soup, but this savory turkey rice is full of flavor and quite the crowd pleaser as well. 😉
Plus, it not only uses leftover meat, but it’s a wonderful way to add the broth from the bottom of the pan as well!

Savory Turkey Rice
Free from gluten, eggs, dairy, and sugar.
Ingredients
- 2 cups long-grain white rice (basmati and jasmine both work as well)
- 4 cups turkey broth or stock (or part stock/part water, depending on how much you have)
- 1 tablespoon parsley
- Himalayan salt and black pepper, to taste
- 1 cup leftover shredded or chopped turkey (light or dark meat)
Instructions
In large pot, add rice and stock. Cover and bring to a boil.
Reduce heat and simmer until rice has soaked up all the liquid and is tender (about 15+ minutes). Remove from heat.
Add salt, pepper, and turkey. Mix well to combine.
Note
This recipe can easily be doubled.
