Need a way to use up leftover sweet potato skins? Even if you don’t, you’ll definitely want to give these crispy sweet potato skins a try!

Even though my husband isn’t the biggest sweet potato enthusiast, when I introduced him to these tasty little crispy sweet potato skins, he became a fan. As did my kids.
These chip-like snacks are easy to whip up (no whipping actually involved), and the perfect way to use up unwanted sweet potato skins… if there are any lying around, that is. Crispy sweet potato skins.
With only two ingredients, one of them being sweet potato skins, these are a delicious snack or side dish. You can coat them with butter or ghee if you’re into dairy, or use avocado oil or coconut oil if you’re dairy-free, like I am.
