One of my favorite seasons of year is almost here.
And no, I don’t mean chocolate season – that’s all year ’round, baby! Haha. I’m talking about sweet potatoes.Â
Even though my husband isn’t the biggest sweet potato enthusiast, when I introduced him to these tasty little crispy sweet potato skins, he became a fan. As did my kids.
These chip-like snacks are easy to whip up (no whipping actually involved), and the perfect way to use up unwanted sweet potato skins… if there are any lying around, that is. I actually have to hide the sweet potato skins from my 3 year old in order to make these. She’ll devour them as soon as we bake the sweet potatoes!

With only two ingredients, one of them being sweet potato skins, these are a delicious snack or side dish. You can coat them with butter or ghee if you’re into dairy, or use avocado oil or coconut oil if you’re dairy-free, like I am.Â

I love sweet potatoes, my family – not so much. When we eat potatoes though, we eat skin and all. I have never made tato skins like this. When I need a vegi chip it’s always been kale or zucchini. This is interesting. I will have to keep this in mind for a recipe that I only need the insides of a potato. Thanks for sharing at The Yuck Stops Here.
