Summertime eats.
Summertime came early this year. Like, April early. It was in the hundreds before May was over. That means my menu lately has been looking something like this:

- Paleo Chocolate Sweet Potato Smoothie Bowl
- Chocolate Peanut Butter Smoothie
- Mineral Rich Electrolyte Smoothie
- Beets & Berries Smoothie Bowl
- Apple Pie Smoothie Bowl
- Carrot Orange Smoothie
- Chocolate Berries & Greens Smoothie Bowl
- Healthy Eggnog Smoothie
- Chocolate Almond Butter Pumpkin Smoothie
Ginger, Banana & Kale Spring Cleaner Smoothie.

Ginger, Banana & Kale Spring Cleaner Smoothie
Free from grain, gluten, eggs, dairy, and refined sugar.
Ingredients
- 1/2 c. coconut milk yogurt (you can use regular yogurt if you’re not dairy-free)
- 1 1/2 c. coconut milk (I like to make my own)
- 2 bananas
- a bunch of kale
- 1 t. kosher, non-GMO gelatin (I use Perfect Supplements) – leave out for vegan
- 1/2 t. ground ginger
- 2 T. honey (optional, leave out for vegan)
- 1 1/2 – 2 c. ice
- 2 T. coconut oil
Instructions
Put everything in a blender (I use a Blendtec), starting with the liquids, and ending up with the ice.
*Pour the coconut oil in while blending so that it doesn’t freeze up into chunks.*
Blend! Distribute! Enjoy!

This is EXACTLY what I've been looking for – it even looks delicious in the picture! I tried a green smoothie last week and I didn't like it at all, but I love the simplicity of your smoothie and I'm going to be trying it with coconut yogurt right away! Thank you for sharing.

We're in 80+ weather and I want to get into that smoothie movement. I will eat (drink?) them some times, but with more nutrients, I would take to them more often. I'm not down for all the sugar. I'll give this one a try. Thanks for sharing with Turn it Up Tuesday!

Oh my goodness, April, you should totally get in on the smoothie movement! 😉 We hide all sorts of yummy nutrition in ours: zucchini, spinach, pumpkin, crookneck squash, apples, carrots… the possibilities are endless! 🙂 I'm not one for sugar, either, I think ripe bananas or a tiny bit of honey take care of any sweetness that I'm craving. I have to share when I first read the title I smiled– thought it was gleefully cute and a little funny. Now in all seriousness, I made this the other day and loved it! Great taste and it was totally refreshing.

I love adding greens into smoothies like this. The banana and coconut flavour masks any potential bitterness.
