Summertime eats.

Summertime came early this year. Like, April early. It was in the hundreds before May was over. That means my menu lately has been looking something like this:

breakfast – smoothies
lunch – ice cream (homemade, of course!)
dinner – soup in the Instant Pot
 
Yeah, that last one doesn’t quite fit the pattern, I know. But we really like soup, and it’s an easy, healthy, meal…. which is another post entirely. 🙂

Anyway… smoothies. One of the reasons I love them is because of all the wonderful vitamins you can jam into one cup. If you’re a fellow smoothie fan, you’ll probably enjoy these, as well:

Ginger, Banana & Kale Spring Cleaner Smoothie.

This smoothie has one of my favorite combos in it, kale and coconut. Coconut is a medium chain saturated fat that is easy for the body to use up and turn into energy, giving you a little extra “spring.” And, in case you haven’t read any health food blogs lately, let me tell you something fun about kale: it cleans you out. Not as in, I-have-to-sit-on-the-toilet-every-5-minutes, but as in detox. Kale helps keep you clean inside by cleaning up your liver. 😉
 
Also, thanks to the wonder of blenders (I use a Blendtec), my kids who normally wouldn’t eat a bunch of kale (which is also loaded with vitamins A, C, and K) will happily down a smoothie packed with it! And my child who doesn’t like to eat yogurt because “it’s wet” will drink it in a smoothie (which is also “wet,” I know, but I don’t necessarily count on my kids for sound logic).
 
Bottom line = smoothies are definitely a breakfast win for mom! (Coincidentally, so is ice cream for lunch.)

Ginger, Banana & Kale Spring Cleaner Smoothie

Free from grain, gluten, eggs, dairy, and refined sugar.

Ingredients

  • 1/2 c. coconut milk yogurt (you can use regular yogurt if you’re not dairy-free)
  • 1 1/2 c. coconut milk (I like to make my own)
  • 2 bananas
  • a bunch of kale
  • 1 t. kosher, non-GMO gelatin (I use Perfect Supplements) – leave out for vegan
  • 1/2 t. ground ginger
  • 2 T. honey (optional, leave out for vegan)
  • 1 1/2 – 2 c. ice
  • 2 T. coconut oil

Instructions

Put everything in a blender (I use a Blendtec), starting with the liquids, and ending up with the ice.

*Pour the coconut oil in while blending so that it doesn’t freeze up into chunks.*

Blend! Distribute! Enjoy!
