Sweet Potato Brownies

Sweet Potato Brownies
Ingredients
- 1 large raw sweet potato
- 4 pastured eggs
- 2 teaspoon vanilla extract (I like to make my own)
- 1/2 cup honey
- 1/2 cup unsweetened applesauce
- 2 teaspoons baking soda
- 1 1/2 teaspoons cream of tartar
- 1/2 cup cocoa powder
- 1/4 cup coconut flour (I like to make my own)
Instructions
Preheat oven to 370 and grease a 9×13 inch baking dish.
Peel and grate the sweet potato, then combine it with the eggs, vanilla, honey, and applesauce.
Stir in everything else and pour into prepared dish.
Bake for 25-30 minutes and let cool for at least 10 minutes before cutting into squares.

Cream of tartarrrrrr, makes me whine. I never have that around — any alternatives? Cornstarch?
Haha. You could use about 1 1/2 t. baking powder and take out the soda too.
Can you use a food processor to chop down the sweet potato instead of grate it? I think grating would be hard work and I want to get to the eating part quickly!
I don’t see why that wouldn’t work, as long as it’s small enough pieces. 🙂 Think carrot-cake-like. 🙂 Hope it works out well!
I use my food processor to grate the sweet potatoes. Since they’re raw, they are hard enough to grate like carrots.

This looks like the perfect recipe for my one-year-old’s birthday “cake.” Do you think maple syrup would work instead of honey? I know babies can have honey at one year old, but I’m a little reluctant on her actual birthday. My other idea would be melted chocolate chips to make it extra chocolate-y. What do you think?
I’m sure maple syrup would work wonderfully! 🙂 Melted chocolate would probably work if you made sure it wasn’t too thick (think honey texture). They’re pretty chocolatey as they are, but I’m a firm believer that you can’t have too much chocolate. 😉 Hope you and your 1-year old enjoy them!
