Scalloped potatoes are not our usual, but this dish is easy and tasty. And even though they’re technically a side, we make a big batch and eat it as a main course.  : )

Gluten Free Scalloped Potatoes |

{Gluten-Free Scalloped Potatoes}
Free of grain, gluten, eggs & sugar.

2 T. extra virgin olive oil
3 large Russet potatoes (or 4-5 smaller ones)
1/2 yellow onion
4 cloves garlic, minced
1/4 t. pepper
1/2 t. kosher salt
2-3 t. oregano
2 T. butter
2 T. arrowroot powder
1 c. homemade stock (chicken or veggie)
1 c. whole milk
1/2 c. shredded cheddar cheese

Grease a 13×9 inch baking dish with olive oil. Chop potatoes in quarters, length-wise, then slice thinly. Place chopped potatoes in prepared dish. Mince onion and garlic and sprinkle over potatoes. Sprinkle with pepper, salt, and oregano. Stir to coat potatoes. Preheat oven to 400. While oven is preheating, melt butter over medium-low heat in small saucepan. When butter is melted, stir in arrowroot powder; whisk until it begins to thicken. Slowly stir in stock and milk, whisking until sauce thickens (about 7-10 minutes). Pour sauce over potatoes and sprinkle with cheese. Bake for 35-40 minutes, or until potatoes are fork-tender.
