Watermelon Kefir Popsicles by Raia's Recipes

Since moving to the south last week, I’m having a hard time getting used to all this heat and humidity (and the bugs. . .  gak.). Thank the Lord for fruit (and air conditioning)!

Watermelon pairs wonderfully with kefir to give these popsicles a sweet, fizzy, pop that makes the heat a little more bearable.  : )

{Watermelon Kefir Popsicles}
Free of grain, gluten, eggs, dairy and sugar.

1 c. watermelon juice
1 c. water kefir

Cut a watermelon in half and scoop the flesh or whatever it’s called out with a big spoon. Set aside for later or eat. Whatever floats yer boat. : ) Pour 1 cup of the juice left in the bottom of the rind into a measuring cup. Add in 1 cup of water kefir. Stir and pour into popsicle molds. Freeze. Enjoy.
