High in vitamins A, C, and K, as well as manganese, kale is one super powerful leaf! With all those benefits, this spring in a cup smoothie gave me just the boost I needed…. to put my kids down for a nap.  : )

{Spring In A Cup}
Free of grain, dairy, eggs, and refined sugar.

2 c. packed fresh kale
3 c. frozen pineapple
2 bananas
2 c. coconut milk (I like to make my own)
1 T. honey
1/2 c. water kefir (here’s how to make it)
1 T. vanilla (I like to make my own)

Place kale in blender and add everything else on top. Blend on high until smooth. Top with coconut whipped cream, if desired.
