Oven BBQ Chicken

When my 5-year old asked for barbecued chicken for dinner, I thought it was a great idea. In fact, I thought about just letting her take care of my weekly menu planning.

But that might have to wait a few years, or we’d be eating a lot of pasta, pizza, and fish….

{Oven BBQ Chicken}
Grain, Gluten, Egg, Dairy & Refined Sugar Free

6 or so chicken thighs, skin on and bone in
kosher salt
granulated garlic
your favorite BBQ Sauce (we like my Mom’s Homemade Barbecue Sauce or my Raw Blender BBQ Sauce)

Preheat oven 400. Wash and dry chicken. Place in a 9×13 inch baking dish on top of twisted up foil (or an oven safe cooling rack, this helps the chicken not get soggy). Brush with olive oil and sprinkle generously with salt, pepper, and granulated garlic. Bake for 30 minutes. Remove from oven, slather with sauce, bake for 15 minutes. Repeat once or twice more until chicken juices are clear. Let chicken stand for a few minutes before serving, to let the sauce sink in more. Enjoy!
