Mmm… Hot breakfasts are so wonderful in the fall and winter! Especially when they contain pumpkin…. and chocolate. Two of my favorite things in one breakfast is pretty much a dream come true! But you know, it’s not good to have chocolate every day for breakfast…. [ahem]. Though if that’s what you like, I’m definitely not going to stop you. (In fact, I wrote a whole round-up of healthy ways to have chocolate for breakfast.)

Hot ‘n creamy pumpkin flax cereal.

Every now and again it’s good to shake things up and try something new. Don’t you agree? I originally saw this recipe a loooong time ago on my friend Tessa’s site, and I knew I would have to try it out sooner or later. After a few tweaks, a little homemade vanilla (because I LOVE vanilla), it’s become a winter favorite for me!

This pumpkin flax cereal is sort of a cross between a pudding and a porridge, perfect for chilly mornings. It’s probably my favorite quick-fix breakfast for pumpkin-everything season. Which could probably actually be all year long for me.

Hot 'n Creamy Pumpkin Flax Cereal

Free of grain, gluten, eggs, dairy, and refined sugar.

Ingredients

Instructions

In small saucepan, whisk together milk, pumpkin, and honey over medium heat until honey is dissolved.

Stir in flax, coconut flour, and cinnamon and heat until almost boiling.

Remove from heat and stir in vanilla and salt.

Let stand a few minutes to thicken.

Enjoy.
