Pumpkin Chai Latte

Comforting, warm, and healthy, this dairy and refined-sugar free Pumpkin Chai Latte is the perfect way to begin a cold winter’s day.

It’s safe to say I’m a pumpkin fanatic, I guess. And that’s ok, because pumpkin is actually pretty good for you! It’s full of vitamins A, C, E, and K, and it’s also a good source of B-complex vitamins like folate, niacin, vitamin B-6, thiamin and pantothenic acid.
Pumpkin Chai Latte | RaiasRecipes.com One of my favorite ways to get pumpkin in my diet, is (of course) pumpkin pie, which I’m happy to eat any time of year, but I also love it in smoothies, bars, quick breads, and drinks, of which this Pumpkin Chai Latte is one of my favorites. 😉

Pumpkin Chai Latte

  1. 2 c. water
  2. 2 c. coconut milk (I like to make my own)
  3. 6 T. pumpkin puree (here's how to do it yourself)
  4. 2 heaping T. honey
  5. 1 bag chai tea of choice (I used Celestial Seasoning's Bengal Spice - yum!)
  6. 1 t. vanilla (I like to make my own)
  7. 1-2 cinnamon sticks
  1. Whisk together water, coconut milk, pumpkin, and honey in saucepan and heat until almost boiling.
  2. Remove from heat and add tea bag, vanilla, and cinnamon sticks.
  3. Cover, and steep for about 5 minutes.
  4. Whisk to combine everything before pouring into mug.
  1. Makes about 4 servings.
