We began eating muesli when we were living in Russia, and it continues to be one of my hubby’s favorite breakfasts. It’s easy and super nutritious. I usually make it the night before and then it’s already for breakfast in the morning. Sometimes I even make a double batch and let half soak an extra day so I have two breakfasts taken care of. : ) Muesli can be eaten dry, soaked, or in milk or kefir.

{Cranberry Apple Muesli}
Free of gluten, eggs & refined sugar.

1/2 c. unsweetened shredded coconut
1 1/2 c. gluten free oats
1/2 t. cinnamon
pinch salt
1 c. diced apple
1/2 c. chopped cranberries
2 t. honey
1/3 c. whey
1/2 c. water

Combine dry ingredients in a bowl; stir in apples and cranberries; stir in honey, whey, and water until well mixed. Pack into a pint sized jar. Cover tightly with lid and let set overnight.
