These dark chocolate walnut coconut no-bake cookies might be a mouthful… but they’re a delicious one. And being 100% paleo and GAPS-friendly, they’re a healthy mouthful, too.

When life is hard, as a mom there’s really only one thing that I can do to get through the day. If I were able to take a nap, you better believe I’d be doing that. But with five six little kids running around, a nap is usually not possible.
Thank goodness for chocolate.
I’m always in the mood for things like dark chocolate brownies, a paleo frappuccino, or nice cream, to help me get through the craziness. Unfortunately, I don’t always have the time to spend whipping up brownies (nor do I always want to heat up the house!), and I need something I can share with crazy children who wander by while I’m making my mother-sustinance.
Enter cookies.
Easy for the win.
Specifically no-bake cookies. More specifically, no-bake cookies that are easy enough for my kids to make for me! Double win. Or triple, if you include the chocolate in there.
Yep, these little dark chocolate walnut coconut no-bake cookies are pretty much everything I need in the middle of a crazy day! Other than that frappuccino…
A delicious mouthful.
One other thing that’s important for chocolate treats in my house is that they don’t include crazy ingredients I won’t always have on hand. My sanity-saving desserts need to be completely accessible to me.Â
Thankfully, coconut and coconut oil, honey, cocoa powder, and nut butter are things that are pretty much staples in my kitchen. Walnuts weren’t before I did the GAPS Diet, but since then I’ve been making sure I keep my fridge stocked with a bag from Coscto.
If you’re not in the habit of keeping walnuts around, you can totally leave them out. Or even substitute them for one of your other favorite nuts. Cashews, pecans, chopped peanuts, or sliced almonds would be delicious, too!

Dark Chocolate Walnut Coconut No-Bake Cookies
Free from grain, gluten, eggs, dairy and refined sugar.
Ingredients
- 3 tablespoons coconut oil
- 1/3 cup honey
- 1/2 cup almond or peanut butter
- 1 teaspoon vanilla (I like to make my own)
- 2 cups unsweetened shredded coconut
- 1/4 cup cocoa powder
- 1/2 cup chopped dairy-free chocolate or chocolate chips (for GAPS-friendly I like to make my own!)
- 1/4 cup chopped walnuts
Instructions
In large saucepan, melt coconut oil, honey, and nut butter over low heat.
Stir in remaining ingredients.
Scoop tablespoonfuls of dough into balls and place on cookie sheet.
Freeze for about 10 minutes, consume.
Sore leftovers in a covered container in the freezer.
