Despite the fact that it is neither a breakfast, nor a dessert, fettuccini alfredo has been my absolute favorite meal ever since I can remember. So creamy, so cheesy, so delicious. Make it with chicken, shrimp, broccoli… you really can’t go wrong.
Unless you can’t have dairy.
Which I can’t.

Thankfully, there are a few people who have been around the dairy-free block and can help a person out when they’re struggling.
I have no idea where I originally found the base for this recipe, but here I am, five years after my first time making it, and I’m still using it! Over the years I tweaked it a few times, gone back and forth, and I’m still working on it.
Creamy Cauliflower White Sauce
With an easy veggie base, this Creamy Cauliflower White Sauce is a great option for those needing a grain-free, dairy-free option for their beloved alfredo sauce. Like moi. Plus, you can easily swap out the chicken stock for veggie stock, or even use water, making it a great option for vegans, as well!

Creamy Cauliflower White Sauce
Free of grain, gluten, eggs, dairy, and sugar.
Ingredients
- 1/2 head large cauliflower
- 2 1/2 c. chicken or veggie stock
- 1 c. extra stock
- 1/2 c. coconut milk (I like to make my own)
- 1 t. granulated garlic
- 1/2 t. sea salt
- pinch paprika or nutritional yeast (optional for GAPS intro)
Instructions
Chop cauliflower into florets and place in pot with water/stock. Bring to a boil and simmer until cauliflower is tender.
Place in blender (I use this one) along with remaining ingredients and puree until smooth. Add more stock or water to achieve desired consistency.
Serve in place of white sauce on zoodles, noodles, poodles (kidding), or in soups.
Makes about 1 quart. Keeps about 4 days in the fridge.

I have a bowl of riced cauliflower in my fridge that I need to use. How can I cook it after it’s riced?
You can stir-fry it or boil it and then drain it.
