Gluten-Free, Vegan Chocolate Chip Cookies
Free from gluten, eggs, and dairy.
Ingredients
1/4 c. + 2 T. arrowroot powder
1/2 c. sorghum flour
1/4 t. xanthan gum
1/4 t. baking soda
dash kosher salt
4-5 T. coconut sugar
1/4 c. coconut oil
1/4 c. room-temperature applesauce
1/3 c. dairy-free chocolate chips (I use my homemade honey-sweetened chocolate chunks, they’re vegetarian, but they’re not vegan…)
Instructions
Preheat oven to 350.
In small oven-safe bowl, melt coconut oil. Stir in applesauce.
In large mixing bowl, whisk together dry ingredients.
Pour in coconut oil/applesauce mixture and mix until smooth dough forms.
Stir in chocolate chips.
Roll tablespoonfuls of dough into balls and flatten slightly with hands.
Place on a cookie sheet and bake for 10 minutes, or until golden-browned.
Note
Make sure the applesauce is room temperature, otherwise it will start solidifying the melted coconut oil.

This is my go to recipe for my boys. Love it! Easy, quick and yummy. I need to double each batch to insure there are enough for everyone. I make them mini cookies. Easy for my boys to pop in their mouth and pack in their lunch. I put a couple of batches of dough, shaped in a log, in the freezer, hopefully they will be ready for slicing by the time the oven warms when I go to make them. Thank you so much for an easy recipe that is allergy friendly. My boys love these cookies.
