As a mom of five six crazy kiddos, I’m always trying to make my recipes healthier and easier than they were in order to give my tribe the best options. I try to cut back on oils in baking, trading them in for fruit and veggie purees, and take out refined sugars, using honey and maple syrup instead.

These delicious little easy chocolate chip cookies have been my go-to recipe for quite a few years. Like the name implies, they are super easy to whip up, and so “normal” looking and tasting my hubby didn’t even think they were really gluten free!
 
They have just the right texture for little hands to hold, and with applesauce and honey for the oil and sweeteners, they are healthy enough that I don’t feel badly letting my kids eat a batch of them for a special treat.

Easy Chocolate Chip Cookies

Free from gluten, eggs, and dairy.

Ingredients

1/4 cup + 2 tablespoons arrowroot powder
1/2 cup sorghum flour
1/4 teaspoon xanthan gum
1/4 teaspoon baking soda
dash kosher salt
4-5 tablespoons coconut sugar
1/4 cup coconut oil
1/4 cup room-temperature applesauce
1/3 cup dairy-free chocolate chips (I use my homemade honey-sweetened chocolate chunks, they’re vegetarian, but they’re not vegan…)

Instructions

Preheat oven to 350.

In small oven-safe bowl, melt coconut oil. Stir in applesauce.

In large mixing bowl, whisk together dry ingredients.

Pour in coconut oil/applesauce mixture and mix until smooth dough forms.

Stir in chocolate chips.

Roll tablespoonfuls of dough into balls and flatten slightly with hands.

Place on a cookie sheet and bake for 10 minutes, or until golden-browned.

Note

Make sure the applesauce is room temperature, otherwise it will start solidifying the melted coconut oil.
