Butternut Squash Pizzas by Raia's Recipes

You don’t really need a recipe for these little pizzas, they’re super easy, and they taste so good even my squash hating *extreme disliking* kids loved them and asked for seconds! I think we have a winner, folks!

{Butternut Squash Pizzas}
Free of grain, gluten & eggs.

1 large butternut squash
olive oil
toppings [sauce, cheese, herbs, etc.]

Preheat the oven to 400 and grease two cookie sheets with olive oil. Peel the squash and slice the stem part into about 1/4-inch disks, trying to get them as close to the same size as possible so they cook evenly. Set aside the bulb part for soup or something else yummy. Brush the disks with olive oil and place on cookie sheets. Bake for 20 minutes, then flip and bake for another 15 minutes. Remove from oven and top with favorite toppings. Bake again for 3 minutes, or until cheese is bubbly.

Note: I normally get about 2 dozen pizzas out of a large/medium butternut squash. It’s enough to feed my kids and hubby, with a few left-overs. : )
