Easy peasy goodness.

If you follow this blog with any regularity, you’ve probably noticed that there are only a few things I truly love more than chocolate – two of them happen to be in these tasty little bites. 
 
Yep, you guessed it: peanut butter and coconut. 
 
Mixed together in a soft, chewy bite of healthy goodness, these little guys (or girls?) are hard to resist. I was going to save some of them for later…
 
Yeah… that didn’t happen. 😉

Raw Peanut Butter Coconut Bites
Free of grain, gluten, eggs, dairy, and refined sugar.

Ingredients
  1. 1 c. unsweetened shredded coconut
  2. 1/4 c. flax meal
  3. 1 T. chia seeds
  4. 1/2 c. peanut butter
  5. 2 T. honey (local is always best!)
  6. 1/2 t. vanilla extract (optional, I like to use my homemade stuff)
  7. 1/4 t. kosher salt
Instructions
  1. Combine everything until well mixed.
  2. Roll pieces of 'dough' into 1-inch balls.
  3. Refrigerate for about 10 minutes before consuming.
  4. Store leftovers (if there be any) in the fridge.
  5. Makes about a dozen.
