Easy peasy goodness.
If you think these are great (and you’d be right in thinking so), you’d probably also like the chocolate version. I know, I couldn’t resist. Everything good tastes better with chocolate added.
You should probably also check out the scrumptious little eBook these Raw Peanut Butter Coconut Bites have been included in – Gluten Free Snacks! It’s filled with all sorts of paleo/whole food snacks (some completely GAPS friendly too!).

Raw Peanut Butter Coconut Bites
Free from grain, gluten, eggs, dairy, and refined sugar.
- 1 cup unsweetened shredded coconut
- 1/4 cup flax meal
- 1 tablespoon chia seeds
- 1/2 cup peanut butter
- 2 tablespoons honey (local is always best!)
- 1/2 teaspoon vanilla extract (optional, I like to use my homemade stuff)
- 1/4 teaspoon Himalayan salt
Combine everything until well mixed.
Roll pieces of ‘dough’ into 1-inch balls.
Refrigerate for about 10 minutes before consuming.
Store leftovers (if there be any) in the fridge.
Makes about a dozen.
