Raw Peanut Butter Coconut Bites
Free from grain, gluten, eggs, dairy, and refined sugar.
Ingredients
- 1 cup unsweetened shredded coconut
- 1/4 cup flax meal
- 1 tablespoon chia seeds
- 1/2 cup peanut butter
- 2 tablespoons honey (local is always best!)
- 1/2 teaspoon vanilla extract (optional, I like to use my homemade stuff)
- 1/4 teaspoon Himalayan salt
Instructions
Combine everything until well mixed.
Roll pieces of ‘dough’ into 1-inch balls.
Refrigerate for about 10 minutes before consuming.
Store leftovers (if there be any) in the fridge.
Makes about a dozen.

I used tahini instead of peanut butter and they tasted divine. Though mine were a bit crumbly and hard to roll into balls. Should I have simply added more nut butter? Thanks!
Oh my goodness! Genius idea, Sarah! And yes, I would’ve added more nut butter. The texture of tahini isn’t always the same as peanut butter, and that would make a difference. I’m TOTALLY using tahini the next time I make these. 😉
