These easy baby banana pancakes with nut butter syrup are a great grain-free, paleo, and GAPS friendly breakfast! Plus they’re 100% kid-approved.
GAPS to the rescue.
The past few days my family has been trying to do a modified full GAPS/paleo diet in order to help my four-year old’s unhappy tummy settle down. Out of all my kids, she’s the one who loves carbs the most. Breads, potatoes, rice, crackers, chips, muffins… she could live off them!
Needless to say I was worried that a terrible storm would unleash at every grainless meal, but so far God has blessed mealtimes with relative calm. Said daughter hasn’t even been asking for bread or tortilla chips! In fact, her overall attitude has been much “more upper” as she would say. 😉
Baby Banana Pancakes
While on our modified GAPS, I’ve been trying out a few new breakfasts. One of them being these little banana pancakes. They were a huge hit this morning. With every bite she inhaled I heard, “Oh! These are SOOO cute!”
Score one point for cuteness, I guess…

Easy Baby Banana Pancakes
Free from grain, gluten, dairy, and refined sugar.
Ingredients
- 2 bananas
- 4 fresh eggs
- 2 tablespoons coconut flour (you could use 1/4 cup almond flour instead)
- 1/2 teaspoon cinnamon
Instructions
Heat skillet over medium heat. I love to cook these on my little cast iron skillet.
Place all ingredients in a medium bowl and mix well with hand mixers, a blender (I use my Blendtec), or mash reeeeally well with a fork. (It’s ok to have a few little banana chunks.)
Pour 2-3 tablespoons of batter onto hot skillet and cook for about 1 minute.
Flip and repeat.
Nut Butter Syrup
Free from grain, gluten, eggs, dairy, and refined sugar.
Ingredients
- 1/4 cup nut butter (almond or peanut work well)
- 2 tablespoons liquid coconut oil
- optional: dash of vanilla or a teaspoon of honey
Instructions
Combine all ingredients in a small liquid measuring cup until smooth.
Pour over pancakes.

what fat do you use for frying?
I usually use coconut oil or bacon fat.
are these ok to freeze?
Sorry, Alicia! I have no idea. 🙂 They never stay around long enough to freeze in my house.
