The past few days my family has been trying to do a modified full GAPS/paleo diet in order to help my four-year old’s unhappy tummy settle down. I was worried that a terrible storm would unleash at every grainless meal, but so far God has blessed mealtimes with relative calm. 🙂

These little pancakes were a huge hit this morning. With every bite she inhaled I heard, “Oh! These are SOOO cute!”

Score one point for cuteness, I guess…  😉

  1. 2 bananas
  2. 4 eggs
  3. 2 T. coconut flour (I like to make my own)
  4. 1/2 t. cinnamon
  1. Heat skillet over medium heat.
  2. Place all ingredients in a medium bowl and mix well with hand mixers or mash well with a fork. (It's ok to have a few little banana chunks.)
  3. Pour 2-3 tablespoons of batter onto hot skillet and cook for about 1 minute.
  4. Flip and repeat.
  1. Unlike regular pancakes, these don't bubble around the edges when you should flip them so you have to watch carefully so they don't burn!
