For the love of donuts.

After going gluten-free, donuts were pretty much out of the question. Though nowadays you can find nice gluten-free donuts at some fancy coffee shops or bakeries, back when I went gluten-free they were pretty much unheard of. And being the foodie I am, of course my reaction to the lack of donut options was to make my own!
 
For my birthday 30th my dear mother-in-law sent me this nifty little doughnut maker as a gift. It’s like a waffle iron, but for doughnuts. And it’s been a huge hit in my family! No more sadness watching my hubby and kids chow down on donuts – I can join them! And I do.
 

Gluten-Free donut options.

Some of my family’s favorite donuts we’ve devoured together are listed below. They’re all gluten-free, and egg and dairy-free, for the most part. I’m sure you’ll enjoy them as much as we do!

Gluten-Free Banana Bread Doughnuts

Banana Bread Doughnuts.

If you don’t have a fancy doughnut maker, I would suggest using this donut pan. And though you don’t have to glaze the donuts, I would suggest doing it. ‘Cause look at that gloriousness!
 
These donuts are completely gluten-free, egg-free, dairy-free, and refined sugar-free. If you want them vegan you can use maple syrup in place of the honey, though I really do love the flavor the honey lends.

Banana Bread Doughnuts

Free from gluten, eggs, dairy, and refined sugar.

INGREDIENTS

INSTRUCTIONS

Preheat donut iron (I use this one), or oven to 350 and grease a donut pan (I use this one).

In large bowl mash banana. Add in honey, coconut oil, and water. Stir to combine well.

In separate bowl, whisk together dry ingredients.

Pour banana mixture over dry stuff and mix until smooth.

Scoop about 3 tablespoonfuls of batter into hot iron and bake for about 5 minutes. (Or scoop into a doughnut pan and bake for 15-20 minutes, depending on the size of your doughnuts.)

Nut Butter Glaze

Free from grain, gluten, eggs, dairy, and refined sugar.

Ingredients

About 1/4 cup each peanut or almond butter, coconut oil, and honey.  

1/4 cup chopped walnuts, optional

Instructions

Combine all ingredients in a small bowl and dip cooled doughnuts into the glaze.

Sprinkle with chopped walnuts.
