For my birthday this year my mother-in-law sent me this nifty little doughnut maker. It’s like a waffle iron, only with doughnuts.

If you don’t have a doughnut maker thing, I would suggest using a mini doughnut pan. It should work out fine, though I haven’t tried it.
 
Feel free to frost these little guys if you want. I didn’t because I was feeding them to my kids for breakfast. I’m sure that cinnamon sugar or cream cheese or peanut butter would be lovely on them.  🙂

Gluten, Egg, Dairy & Refined Sugar Free

Ingredients
  1. 1 large banana
  2. 1/4 c. honey
  3. 3 T. coconut oil
  4. 1/4 c. sorghum flour
  5. 1/4 c. brown rice flour
  6. 1/4 c. coconut flour (I like to make my own)
  7. 1/2 c. arrowroot powder
  8. 1 1/2 t. cinnamon
  9. 1/2 t. allspice
  10. 1/2 t. nutmeg
  11. 1 t. guar gum
  12. 1 1/2 t. baking powder
  13. 1/4 t. baking soda
  14. 1/4 t. kosher salt
  15. 1/2 c. hot water
Instructions
  1. Preheat donut iron (or oven to 350).
  2. In large bowl mash banana.
  3. Add in honey and coconut oil. Stir to combine well.
  4. In separate bowl, whisk together dry ingredients.
  5. Pour banana mixture over dry stuff and mix until smooth.
  6. Mix in hot water and stir until smooth.
  7. Pour about 3 tablespoonfuls of batter into hot iron and bake for 8-10 minutes. (Or bake in mini doughnut pans for 15-20 minutes.)
