So, I needed a tasty, easy, allergy-friendly dessert for a church potluck. This Honey Applesauce Cake seemed like a good idea. 😉

Gluten, Egg, Dairy Refined Sugar Free

  1. 1 banana
  2. 2 c. applesauce
  3. 1/2 c. honey
  4. 1/3 c. coconut oil
  5. 1 t. vanilla (I like to make my own)
  6. 1 c. brown rice flour
  7. 1 c. sorghum flour
  8. 1 1/2 t. baking soda
  9. 1 t. cinnamon
  10. pinch allspice and nutmeg
  11. 1/2 t. kosher salt
For the glaze
  1. 1/4 c. honey
  2. 1 t. arrowroot powder
  3. 1/4 c. coarsely chopped walnuts
  1. Preheat oven to 350 and grease a bunt pan.
  2. In large bowl, whisk together dry ingredients and make a well in the middle.
  3. Puree banana, applesauce, honey, coconut oil, and vanilla in blender, then pour into well.
  4. Mix until no dry streaks remain and pour into prepared pan.
  5. Bake for 50-55 minutes, or until golden-browned and cake springs back slightly when pressed.
  6. Cool in pan for 10 minutes before inverting to a plate. In a small saucepan, warm honey until liquid.
  7. Stir in arrowroot and walnuts.
  8. When cool, drizzle with glaze.
