Mexican Chocolate Cake

I have never been to Mexico. This is the first Mexican chocolate cake I’ve ever eaten, let alone made, so I have no idea how this compares to a “real” one. I don’t even know if Mexicans actually make a cake like this, either.

But I suppose none of that really matters. It’s soft, moist, cake and it’s chocolate. And it has a yummy frosting. Why get bogged down with any other details?

Mexican Chocolate Cake

Free from gluten, eggs, and dairy.

Ingredients

  1. 1/2 cup milk of choice (I like to use my homemade coconut milk)
  2. 1 teaspoon apple cider vinegar
  3. 1 teaspoon baking soda
  4. 1 tablespoon flax meal
  5. 1/2 cup evaporated cane juice
  6. 1/4 cup cocoa powder
  7. 1 1/2 teaspoons cinnamon
  8. 1/8 teaspoon chili powder
  9. 1/4 cup soft butter
  10. 1 teaspoon vanilla (I like to make my own)
  11. 1/2 cup boiling water
  12. 1/2 cup sorghum flour
  13. 1/2 cup arrowroot powder
  14. 1/2 teaspoon xanthan gum
  15. 1/2 teaspoon kosher salt

Instructions

Preheat oven to 350 and grease a 9×9 inch cake pan and dust with cocoa powder.

Combine milk, vinegar, and baking soda and set aside in a warm place to curdle.

In large bowl, whisk together flax/chia meal, sugar, and cocoa.

Stir in boiling water, butter and vanilla, and mix well until thick and butter is melted.

In separate bowl, whisk together remaining dry ingredients. Add into chocolate mixture a little at a time, beating well after each addition.

Stir in buttermilk and pour batter into prepared pan.

Bake for 35-40 minutes, or until toothpick comes out clean.

Cool, then frost.

Cinnamon Cream Cheese Frosting

Free from grain, gluten, and eggs.

Ingredients

  • 3 ounces softened cream cheese
  • 1 tablespoons softened butter
  • 1 teaspoon vanilla (I like to make my own)
  • 3/4 – 1 cups powdered sugar (I like to make my own)
  • 1 1/2 – 2 teaspoons cinnamon (depending on your taste)

Instructions

With a hand mixer, beat cream cheese, butter and vanilla on high until combined. Add powdered sugar 1/2 cup at a time, until desired consistency. Beat in cinnamon.
