I am not the hugest buckwheat fan, but these Banana Buckwheat Pancakes were pretty good. Healthy and with a little sweetness from the banana.

Banana Buckwheat Pancakes

Free from gluten, eggs, dairy, and sugar.

Ingredients

Instructions

Preheat lightly greased skillet over medium-low heat. In large bowl, mash banana until smooth.

Stir in rice milk, 1/4 cup at a time, until smooth.

Sprinkle flours and powders and soda on top and mix until no dry streaks remain.

Pour 1/4 cupfuls of batter on skillet and cook until browned underneath (about 1-2 minutes).

Flip and repeat.
