It’s not just me. My whole family is in love with breakfast. And we don’t only eat it for breakfast, we eat it for lunch and dinner, too. And when breakfast is something like donuts, I suppose we also eat it for dessert.
Pancakes are one of my family’s favorite breakfast foods. We generally eat them like a flat bread with jam or peanut butter and molasses on top. If the pancake is really good, my husband will just eat it with butter.
Banana Buckwheat Pancakes
Since we love pancakes so much, I’m often trying out new recipes and ways to make pancakes healthier for my pancake-inhaling family. Though I am not the hugest buckwheat fan, these Banana Buckwheat Pancakes are quite yummy and very easy to whip up. Since their primary ingredient is buckwheat – and they’re only sweetened with banana – they’re healthy too!
What-wheat?
Despite having wheat in its name, buckwheat isn’t related to wheat and is 100% gluten-free. Like quinoa and amaranth, it belongs to a group of foods commonly called pseudocereals. In other words, buckwheat is a seed that is consumed as a cereal grain, but it doesn’t grow on grasses.
Buckwheat is also actually full of minerals, vitamins, and amino acids, too. It contains:
- Manganese
- Copper
- Magnesium
- Iron
- Phosphorus
- Niacin
- Vitamin B6
- Folate
- Pantothenic acid
- Zinc
- Quercetin
- Lysine
- Argenine
When compared to other grains, the minerals in cooked buckwheat are better absorbed, since it’s low in phytic acid (read more about phytic acid here). Souring buckwheat (as in sourdough or soaked pancakes) actually turns buckwheat into a prebiotic food!

Banana Buckwheat Pancakes
Free from gluten, eggs, dairy, and sugar.
Ingredients
- 1 large spotted banana
- 1 cup coconut milk (I like to use my homemade coconut milk)
- 2/3 cup buckwheat flour
- 1/3 cup arrowroot powder
- 2 tablespoons sorghum flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
Instructions
Preheat lightly greased skillet over medium-low heat. In large bowl, mash banana until smooth.
Stir in milk, 1/4 cup at a time, until smooth.
Sprinkle dry ingredients on top and mix until no dry streaks remain.
Pour 1/4 cupfuls of batter on skillet and cook until browned underneath (about 1-2 minutes).
Flip and repeat.
