I must say, this Coconut Mint Chocolate Chip Blender Ice Cream was the best breakfast I’ve eaten in a while. And with no refined sugar, food coloring, additives, or preservatives, this soft serve only has super good-for-you ingredients! It’s a win-win breakfast option. 
So find a cute 1-year old and enjoy your treat together! But be careful to keep the peppermint extract out of reach of said 1-year old, or it all may end up on your bedroom carpet…. Not that I would know this from experience or anything. 
Coconut Mint Chocolate Chip Blender Ice Cream
Grain, Gluten, Eggs, Dairy & Sugar Free

  1. 12 oz. coconut milk (I like to use my homemade coconut milk)
  2. 1/2 c. baby spinach leaves
  3. 1/4 c. applesauce
  4. 1/4 c. honey
  5. 1 t. peppermint extract
  6. 1/4 c. dairy-free chocolate of choice (I like these)
  7. about 18 ice cubes
  1. Place everything in blender (I use my Blendtec) and blend on high until smooth and creamy.
  2. Refrigerate leftovers for a smoothie later, or freeze them and re-blenderize them with a tad more coconut milk for more ice cream!
