My first attempt at an allergy-friendly scone turned out yummy, but with a texture more like banana bread. So if you make these, don’t expect the biscuity texture of a glutenous scone.

I am excited to experiment a little more to get the texture right, but in the meantime, these are delicious and still go great with tea!

{Apple Walnut “Scones”}
Gluten, Egg, Dairy & Refined Sugar Free

3/4 c. coconut flour (I like to make my own)
1 c. brown rice flour (updated from 3/4 c.)
1/4 c. potato starch
1 t. baking soda
1 banana
1/2 c. water
1/3 c. honey
1 apple, diced (about 1 c.)
1/2 c. walnuts, coarsely chopped

Preheat oven to 350 and line a cookie sheet with parchment paper. In large bowl, whisk together dry ingredients. Add apple and walnuts and set aside. In separate bowl, mash or beat banana until smooth and creamy. Add in water and honey and beat until well combined. Pour over dry ingredients and mix well. Form into a ball, place on prepared pan and press into a 1/2 inch disk. Bake for 15 minutes, or until lightly browned on the edges. Enjoy with tea. : )
