I love this cake.

Really, I do. It’s so easy to whip up in the morning for breakfast, and it’s healthy enough that I don’t mind making it for my crazy kids. And they think they’re getting a special treat having “cake” for breakfast….

Easy Applesauce Breakfast Cake
Free of gluten, eggs, dairy & sugar.

  1. 1 c. applesauce
  2. 1/4 c. flax meal
  3. 1/4 c. chia meal (a.k.a. ground chia seeds, or more flax meal)
  4. 1/4 c. honey
  5. 1 t. vanilla (I like to make my own)
  6. 3/4 c. brown rice flour
  7. 1/4 c. potato starch
  8. 2 1/2 t. baking powder
  9. 1 t. baking soda
  10. 1 t. guar gum
  11. 2 t. cinnamon
  1. Preheat oven to 350 and grease a 9x9 inch baking dish.
  2. Combine applesauce, flax, chia, honey and vanilla. Mix well until creamy and set aside.
  3. In separate bowl, whisk remaining ingredients together. Stir in applesauce mixture until no dry ingredients remain. Immediately pour into prepared dish and smooth out lightly with a spatula.
  4. Bake for 20-22 minutes. Enjoy!
