Pregnant issues.
As any mom whose given birth can attest to, pregnancy can do some strange things to you. Especially your eating habits. Most of my life I have not been much of a nut or peanut type of girl. (I know, peanuts aren’t nuts. I’m just putting them in the same category for snacking purposes.) But wayyy back when I only had three kids, and was pregnant with #4, I needed peanuts.
I craven them – for weeks! Finally I decided that if I was craving them so much, I must need them. So like any good hubby, mine went out and bought me a nice 5 pounds of plain, salted peanuts.
Sadly, when he got home and delivered the afore craved snack in to my hands a different sort of pregnancy problem arose. I didn’t want them any more. Not one bit.
Honey roasted peanuts.
Five pounds of peanuts. What in the world was I going to do with them? What any good foodie does….
Experiment, of course. 😉
Even though I was no longer in the mood for pain, salted peanuts, the thought of honey roasted ones sure sounded good! So I set about trying to figure out how to make easy, delicious homemade honey roasted peanuts.
A healthy alternative.
Of course, being pregnant, I could’ve just asked my husband to go out and buy me honey roasted peanuts. But I hate wasting food, not to mention money. Plus, the next time you’re out shopping for honey roasted peanuts, take a look at the ingredients. You won’t be so keen to buy them after a swift perusal!
Here are the ingredients in a popular brand of honey roasted peanuts that you can buy in pretty much any grocery store:
Seriously, does something as simple sounding as honey roasted peanuts need all that stuff in it? Nope. Not one bit.
Easy does it.
For homemade honey roasted peanuts you pretty much only need three ingredients. Peanuts, honey, and some sort of fat. I choose to coconut oil, to keep them dairy-free, but if you can do dairy, you could use butter instead. If your peanuts aren’t salted, you will probably want to use some delicious sea salt on top, too!

Honey Roasted Peanuts
Free of grain, gluten, eggs, dairy & refined sugar.
Ingredients
- 6 cups organic peanuts
- 1/3 cup honey
- 1/4 cup coconut oil
- 2 teaspoons sea salt (optional, use if your peanuts aren’t already salted)
Instructions
Preheat oven to 350 and place peanuts in bowl.
In small saucepan, melt honey and coconut oil until liquid. Slowly pour liquid over peanuts while stirring them. Stir until evenly coated.
Spread peanuts on cookie sheet and place in oven. Bake for about 10 minutes stirring at least twice to make sure they don’t burn.
After the honey caramelizes a little, remove the pan from the oven and set out to cool for about 10 minutes. Break up into pieces and store in covered container.
Notes
These will be stickier than store-bought honey roasted peanuts, because they don’t have any starch to dry them out and keep them separate.

Haha! Yeah, you definitely don’t need 5 pounds to make these. I use 2 cups sometimes. 🙂 Just divide the amount of honey and coconut oil you need. 🙂
