My husband and I learned this recipe when we were living in Far East Russia on the border of China. I don’t exactly remember how we got it, but it’s AMAZING! Seriously – we love it. It has become a sacred meal in our house. : )

Homemade Sweet & Sour Chicken by Raia's Recipes

{Homemade Sweet & Sour Chicken}
Gluten, Egg & Dairy Free

1-1 1/2 lb. chicken, skinned and de-boned
1 red pepper
salt & pepper, to taste
2 T. cornstarch or arrowroot powder
1/2 c. water
1/3 c. vinegar
3-4 T. evaporated cane juice (depending how sweet you like your sour sauce)
1 T. catsup
1 T. Bragg’s liquid aminos or any gluten-free, non-GMO soy sauce

Cut chicken into 1-inch chunks. Dice the red pepper. Sauté chicken over medium heat for about 10 minutes. Add pepper and sauté until chicken is cooked. Set aside.

In small bowl or measuring cup, whisk cornstarch into water until dissolved. Set aside. In medium saucepan, combine vinegar, sugar, catsup and aminos. Whisk until well combined. Bring to a boil, then stir in cornstarch mixture. Stir until sauce begins to thicken, then remove from heat. Stir until smooth. Add in chicken and peppers to sauce and serve over rice.

Makes 3-4 servings.
