Cinnamon Chocolate Chip Cookies
Free of gluten and eggs.

  1. 1 1/4 c. brown rice flour
  2. 3/4 c. tapioca flour
  3. 1/2 c. potato starch
  4. 1/2 t. xanthan gum
  5. 1/2 t. baking soda
  6. 1 t. cinnamon
  7. 1/4 c. applesauce
  8. 1/2 c. butter, melted
  9. 1 t. vanilla (I like to make my own)
  10. 1/2 c. evaporated cane juice
  11. 1 c. chocolate chips (I like to use these)
  1. Preheat oven to 350.
  2. Melt butter. Add applesauce, vanilla and sugar. Mix well until creamy.
  3. In separate bowl, whisk together dry ingredients.
  4. Pour wet ingredients into dry ones.
  5. Fold in chocolate chips.
  6. Scoop spoonfuls of dough onto cookie sheet and bake for about 12 minutes.
  7. Let cookies cool on cookie sheet a few minutes before removing.
