Easy Cheese 'n Chia Crackers

  1. 1/2 c. brown rice flour
  2. 1/2 c. tapioca flour
  3. 1/2 c. arrowroot powder
  4. 2 T. chia meal (ground chia seeds)
  5. 1/2 t. salt
  6. 1/4 guar gum
  7. 1 c. shredded cheddar cheese
  8. 1/2 c. cold butter, cubed
  9. 1/3 c. water
  1. In large bowl, whisk together dry ingredients.
  2. Cut in butter (with a pastry cutter or two knives) until it is in pea-sized crumbs.
  3. Stir in cheese and enough water to make the dough begin to ball up.
  4. With your hands, combine dough into one ball, cover with plastic wrap and refrigerate for about 15 minutes.
  5. Preheat oven to 350.
  6. Remove dough from fridge and roll out, half at a time, between two pieces of plastic wrap.
  7. Transfer dough to a cookie sheet and cut into little squares with a pizza cutter.
  8. Bake for about 10 minutes, or until golden.
