Fudgy Black Bean Brownies

Fudgy Black Bean Brownies
Free of grain, gluten, eggs, and dairy.
Ingredients
- 2 cups soaked and rinsed dry beans (I usually sprout them first)
- 3 tablespoons flax meal
- 1/2 cup + 1 tablespoon hot water
- 1/2 cup applesauce
- 1/2 cup evaporated cane juice (I like this kind)
- 1/4 cup + 2 tablespoons cocoa powder
- 1 tablespoon vanilla (I like to make my own!)
- 2 teaspoons baking powder (I like to make my own – it’s easy!)
- 1 cup chocolate chips (I like to use these dairy-free ones, or my homemade chocolate chunks)
Instructions
Preheat oven to 350 and grease a 9×9 inch baking dish.
Place everything in a food processor or high powered blender except the baking powder and 1/2 cup chocolate chips.
Process until smooth.
Sprinkle baking powder on top and pulse lightly until combined.
Pour batter into prepared pan and sprinkle with remaining chocolate chips.
Bake for about 45 minutes, until brownies are firm and a toothpick comes out clean.
NOTES
Optional: stir in 1/2 cup chopped walnuts or add 1 teaspoon peppermint extract.
do you cook the beans first?
No, I don't cook the beans. I usually soak them overnight and then sprout them, but you probably don't have to sprout them. :o)
wow that makes life 10x easier! I usually soak and then cook them and then make my recipe – takes forever! what a brilliant idea!

Oh gosh, another amazing looking black bean recipe…I just can’t find the beans here! I am going to do some big hunting!
Do you have access to any navy beans? They would probably work the same, the brownies would just not be as dark looking. 🙂 I hope you have a chance to try them!
Your brownies in the pic look like they have a frosting. Is that just the melted chocolate chips on top? Did you spread them with a spatula or anything?
I’m about to make these for a friend that’s had a tough week (their family is gluten-free/dairy-free, so these are perfect!) and I can’t wait to try them, too!!
Yes, after it comes out of the oven I’ll just sprinkle with some chocolate chips and cover it with a cookie sheet. Then after a few minutes I spread out the melted chocolate chips with a spatula. 🙂 Hope your friend enjoys them! 🙂
