Banana Applesauce Muffins by

{Banana Applesauce Muffins}
Free of gluten, egg, dairy & refined sugar.

2 T. flax meal
1/4 c. + 2 T. hot water
1 large banana, mashed
1 c. applesauce
1/3 c. honey
2 t. vanilla (I like to make my own)
1 t. apple cider vinegar
1 c. brown rice flour
1/2 c. tapioca flour
1 t. baking soda
2 t. baking powder
1 t. guar gum
1 T. cinnamon
1/4 t. nutmeg

Grease a muffin tin and preheat oven to 350. Combine flax meal and hot water in small bowl and set aside until gelled (about 5 minutes). In large bowl, combine remaining dry ingredients. In separate bowl, combine remaining ingredients. Add flax mixture and add pour into dry ingredients. Mix until no dry ingredients remain. Pour 1/3 cupfuls into prepared tins and bake for 20 minutes, or until tops are firm.

Makes 12 muffins.
