Full of vitamin C and probiotic goodness, these little Grapefruit Gummies are a healthy choice for snack time!
…and my kids CAN’T WAIT. Seriously. Just about every other day at least one of my kids ask me if it’s still winter, or when it will be spring.
Not that it’s not nice enough to be outside anyway, since we live in the sunny-99%-of-the-time south. Maybe they miss the mosquitoes…
Just kidding. What they really want is popsicles. But until then I’ve been satisfying them with fruit snacks. 🙂
Since it is technically still wintertime, and colds and bugs are still going around, I’ve fortified these gummies with water kefir for probiotic strength, honey for added minerals (niacin, thiamine, pantothenic acid, riboflavin, vitamin C & B6, calcium, and iron, to name just a few), and magnesium powder, since it’s one of the 6 macro-minerals that our bodies need (and most Americans are deficient in it). And all that goodness is on top of the vitamin C found naturally in the grapefruit!
A pretty stellar winter snack, if you ask me… or my kids. 🙂
I chilled them in my new favorite toy: these cute little silicone candy molds. But of course you don’t have to use molds, these will just as easily set up in any baking dish, and can be cut with a knife afterward.

- In small saucepan sprinkle gelatin over water kefir (or slowly stir in). Allow to bloom for a few minutes. Turn the heat to low and dissolve the gelatin. When gelatin is dissolved stir in the honey.
- In blender, juice a grapefruit.
- Add gelatin mixture to the grapefruit juice, along with remaining ingredients.
- Pulse to combine, then pour into candy molds or two 8x8 inch baking dishes.
- Refrigerate until set (about 3-4 hours).
- If using baking dishes, cut the gummies into little squares.
- Store covered in the refrigerator.
