I love the beach, flip flops, and not having to wear layers of clothes, but when it comes down to it, I’m not really a huge fan of summer. Now, I don’t mean to complain, but with hurricane season, the exponential growth of the mosquito population, and girls running around with practically nothing on, I’m pretty sure it’s only the amazing summer treats that keep me from melting until fall rolls around again (that and the blessing of a/c).
Even though it’s been in the 90’s since around April down here in the south, it’s technically summer now, so I thought a nice little round-up of all the things that do make me happy about summer was in order.
All of them are tasty, easy, and allergy-friendly.

  7. I see some great recipes I want to try…especially the freezer butter fudge. Some of the feedback says that the recipe isn't enough to coat a 8×8 pan…do you need to double this recipe? Thanks for sharing on Merry Monday.

  8. Thanks for pointing that out, Erlene. I should try and go in and update the recipe. I make it in a loaf pan (9×5 inches) for thicker, but in an 8×8 for thinner. It tastes great either way. 😉
