The Spring Cleaner Smoothie

So, it’s supposed to be 93 degrees out this weekend.

That means my menu lately has been looking something like this:

breakfast – smoothies
lunch – ice cream (homemade, of course!)
dinner – soup

Yeah, that last one doesn’t quite fit the pattern, I know. But we really like soup, and it’s an easy, healthy, meal…. which is another post entirely. 🙂

Anyway… smoothies. One of the reasons I love them is because of all the wonderful vitamins you can jam into one cup. (If you’re a smoothie lover, you can check out my extensive smoothie list here.)

This smoothie has one of my favorite combos in it, kale and coconut. Coconut is a medium chain saturated fat that is easy for the body to use up and turn into energy, giving you a little extra “spring.” And, in case you haven’t read any health food blogs lately, let me tell you something fun about kale: it cleans you out. Not as in, I-have-to-sit-on-the-toilet-every-5-minutes, but as in detox. Kale helps keep you clean inside by cleaning up your liver. 😉

And, thanks to the wonder of blenders (I use this one), my kids who normally wouldn’t eat a bunch of kale (which is also loaded with vitamins A, C, and K) will happily down a smoothie packed with it! My child who doesn’t like to eat yogurt because “it’s wet” will drink it in a smoothie (which is also “wet,” I know, but I don’t necessarily count on my kids for sound logic…).

Bottom line = smoothies are definitely a breakfast win for mom! (Coincidentally, so is ice cream for lunch.)

  1. I'll have to have my daughter try this one. She likes coconut and bananas and with her I can usually sneak in spinach but I have yet to try kale in hers. I will try this and see. Thanks!

  2. This is EXACTLY what I've been looking for – it even looks delicious in the picture! I tried a green smoothie last week and I didn't like it at all, but I love the simplicity of your smoothie and I'm going to be trying it with coconut yogurt right away! Thank you for sharing.

  3. Wow you are into warm weather.. we haven't gotten past 70 here in NY, but I may have to try this smoothie soon. Thanks for sharing it with us on foodie friday. PInning.

  4. We're in 80+ weather and I want to get into that smoothie movement. I will eat (drink?) them some times, but with more nutrients, I would take to them more often. I'm not down for all the sugar. I'll give this one a try. Thanks for sharing with Turn it Up Tuesday!

  5. Oh my goodness, April, you should totally get in on the smoothie movement! 😉 We hide all sorts of yummy nutrition in ours: zucchini, spinach, pumpkin, crookneck squash, apples, carrots… the possibilities are endless! 🙂 I'm not one for sugar, either, I think ripe bananas or a tiny bit of honey take care of any sweetness that I'm craving. I hope you enjoy this smoothie, thanks for stopping by!
