Quick Fix Dark Hot Chocolate Shots


Being a parent is hard.

I’m pretty sure I don’t need to elaborate on that fact. Some nights, my four crazy kids take hours to fall asleep. Usually when this happens, my husband and I try to take advantage of it and get in a nice in-house mini-date. We watch a “dad and mom” movie (i.e. something that’s not animated), play a game of Qwirkle or Skip-Bo, and have a treat that contains the word chocolate in its name.

Before you go getting all jealous over how exciting our in-house dates are, remember I mentioned chocolate. . . . 

This little thing of beauty is one of my most recent “they’re taking forever to sleep” creations. It’s easy to make, and helps calm the parental nerves. 🙂
This recipe makes about 1/4 cup of hot chocolate (which equals 1 shot, if you’re like me). But it’s easy to double up so that your spouse can actually have some….
Quick Fix Dark Hot Chocolate Shots
Free of grain, dairy, eggs and refined sugar.

  1. 2 T. cocoa powder
  2. 1 T. honey (or more, if you don't want it quite so dark)
  3. 1/4 c. coconut cream (I just use the cream off the top of my homemade coconut milk)
  4. pinch sea salt
  5. 1/2 t. vanilla extract (I like to make my own)
  1. Whisk cocoa and honey together in a small saucepan. Turn heat to medium-low and whisk in coconut cream and salt. Continue to whisk until smooth and heated through (don’t boil it!). Remove from heat, and stir in vanilla. Pour into your favorite espresso mug and enjoy!

  4. I don't understand what you mean by "vanilla (I like to make my own)". I'm guessing it's a other-side-of-the-pond thing. Do you mean you split vanilla pods and do something with the seeds/goo – some sort of liquid vanilla extract? Or are you referring to vanilla sugar (i.e. placing a spent vanilla pod in a sealed jar of sugar)?
    Please enlighten a befuddled limey!

  5. 🙂 Yes to your first question. 🙂 If you click on "make my own" up there next to vanilla in the ingredient list, it will take you to the "recipe" for making homemade vanilla extract. Sorry if I wasn't clear!
