My 4-year old had asked for doughnuts for dinner.

She’s pretty cute, and it is Saturday, so I decided to oblige her.

Since it was for dinner, these aren’t super sweet, but they disappeared pretty quickly anyway.  🙂
I also made these in a doughnut maker, but you could use a mini doughnut pan and bake them instead.
Carrot Cake Doughnuts
Free of gluten, eggs and dairy.

  1. 3 T. flax meal, gelled in enough water to make 1/4 cup, total
  2. 1 c. sorghum flour
  3. 1/4 c. arrowroot powder
  4. 1/4 c. coconut flour (here's how to make your own)
  5. 2 T. evaporated cane juice
  6. 2 t. baking powder
  7. 1/2 t. baking soda
  8. 1/2 t. xanthan gum
  9. 2 t. ground cinnamon
  10. 1 t. ground ginger
  11. 1/2 t. nutmeg
  12. 1/4 t. ground cloves
  13. 1/2 c. applesauce
  14. 3/4 c. orange juice
  15. 1 1/2 c. finely grated carrots
  1. Preheat doughnut maker (or oven to 350).
  2. In liquid measuring cup, combine flax meal and warm water. Let stand until gelled.
  3. In large bowl, whisk together dry ingredients.
  4. Add applesauce and orange juice to flax mixture.
  5. Pour into dry ingredients and mix until no dry streaks remain. Fold in carrots.
  6. Scoop 2-3 tablespoons of batter into doughnut maker (or lightly greased doughnut pan).
  7. Bake for 9 minutes, or until firm to the touch.

  2. oooh, these look great, and it is Saturday, hmm, may have to make them, just made coconut flour, so why not?! Should be yummy fun!!!:-)

  3. so, quick question, do you find that your homemade coconut flour requires more in a recipe, than store bought coconut flour? I often have to double the amount of coconut flour used if making the recipe with my own. Does that make sense? I run it through the vitamix to chop it up super fine and everything, just wondering if it just me, or maybe because I use more coconut in the coconut to water ratio, could be it, just curious:-)

  4. That's a good question, Jamie. In my own recipes, I've only ever used my homemade coconut flour, so it always works fine. Haha. I will try it out on someone else's recipe and see how it goes. 🙂 I hope you enjoy the doughnuts. 🙂 Thanks for stopping by!
