For Hanukkah this year my husband bought our kids their first board game: Candy Land. Once finding out that the gingerbread men playing pieces in the game were supposed to be cookies they immediately began begging to make some.
 
Of course, being the master baker that I am, I’d never made gingerbread men before…

Gingerbread Cut-Out Cookies
Free of grain, gluten, eggs, dairy, and refined sugar.

Ingredients
  1. 2 3/4 c. almonds
  2. 1/2 c. arrowroot or tapioca starch
  3. 1 t. cinnamon
  4. 1 t. ginger
  5. 1/2 t. cloves
  6. 1/4 t. nutmeg
  7. 1/2 t. kosher salt
  8. 1/2 t. baking soda
  9. 1/2 c. molasses
  10. 1/2 c. honey
  11. 3 T. coconut oil
Instructions
  1. Preheat oven to 350 and grease two cookie sheets very well or line them with parchment paper.
  2. Place almonds and arrowroot in food processor or high-powered blender (I use this Blendtec). Pulse until a fine meal is achieved.
  3. Dump into a large bowl and whisk in spices, salt, and soda.
  4. In small saucepan, heat molasses until just boiling. Remove from heat and stir in honey and coconut oil.
  5. Pour over almond mixture and mix well.
  6. Divide dough between cookie sheets and press out with a greased piece of plastic wrap until about 1/4 inch thick.
  7. Bake for 10 minutes.
  8. Let cool for a few minutes before cutting into shapes.
  9. Remove from pan and devour.  : )
