Thankfully, I had a bag of corn tortillas in the fridge just waiting to be used, so I decided to try and make my own tortilla chips. Who knew it was sooo easy, not to mention WAY cheaper than buying them?

{Baked Tortilla Chips}
Free of gluten, eggs, dairy & sugar.

6-inch corn tortillas
kosher or sea salt
granulated garlic (optional, but oh so yummy!)
olive oil

Preheat oven to 350. Cut tortillas into wedges. Using fingers, or a pastry brush, spread each side of each chip with olive oil and place on a cookie sheet (don’t overlap them). Sprinkle with salt and bake for 10 minutes, or until lightly browned and crispy.

Note: I usually only bake 2 cookie sheets full at once, since without preservatives, they don’t taste as scrumptious the next day. So, to simplify the near-daily making of them, I let my dear hubby cut the entire 4 pound bag of corn tortillas into chips for me. Now they are sitting in the fridge, ready to be oiled, salted, and baked at my leisure. : )
