I have never been to Mexico.

This is the first Mexican chocolate cake I’ve ever eaten, let alone made, so I have no idea how this compares to a “real” one. I don’t even know if Mexicans actually make a cake like this, either.

But I suppose none of that really matters. It’s soft, moist, cake and it’s chocolate. And it has a yummy frosting. Why get bogged down with any other details?

Ingredients
  1. 1/2 c. milk of choice (I like to use my homemade coconut milk)
  2. 1 t. apple cider vinegar
  3. 1 t. baking soda
  4. 1 T. flax meal
  5. 1/2 c. evaporated cane juice
  6. 1/4 c. cocoa powder
  7. 1 1/2 t. cinnamon
  8. 1/8 t. chili powder
  9. 1/4 c. soft butter
  10. 1 t. vanilla (I like to make my own)
  11. 1/2 c. boiling water
  12. 1/2 c. sorghum flour
  13. 1/2 c. arrowroot powder
  14. 1/2 t. xanthan gum
  15. 1/2 t. kosher salt
Instructions
  1. Preheat oven to 350 and grease a 9x9 inch cake pan and dust with cocoa powder. Combine milk, vinegar, and baking soda and set aside in a warm place to curdle. In large bowl, whisk together flax/chia meal, sugar, and cocoa. Stir in boiling water, butter and vanilla, and mix well until thick and butter is melted. In separate bowl, whisk together remaining dry ingredients. Add into chocolate mixture a little at a time, beating well after each addition. Stir in buttermilk and pour batter into prepared pan. Bake for 35-40 minutes, or until toothpick comes out clean. Cool, then frost.

Ingredients
  1. 3 oz. softened cream cheese
  2. 1 T. softened butter
  3. 1 t. vanilla (I like to make my own)
  4. 3/4 c. - 1 c. powdered sugar (I like to make my own)
  5. 1 1/2 -2 t. cinnamon (depending on your taste)
Instructions
  1. With a hand mixer, beat cream cheese, butter and vanilla on high until combined. Add powdered sugar 1/2 cup at a time, until desired consistency. Beat in cinnamon.
