Not cornbread-like pancakes.
My husband has not been a huge fan of gluten-free goods since our humble gluten-free beginnings almost 6 years ago. He doesn’t have to eat gluten-free (neither do most of our kids), but in order to save me the trouble of having to make two separate meals, he’s gone gluten-free with me.
Through the years he’s graciously borne with all my flops and failures. I can usually tell when something is awful when I get the comment, “Tastes like cornbread.” Not that I can’t make some tasty cornbread (like this delicious recipe here), but he’s just never liked cornbread much. Must be a texture thing.
So anyway, when he said these were the best gluten-free ones I’ve ever made, I knew that was some compliment!
True to the recipe’s title (I’ve definitely got a gift for naming recipes – ha), these pancakes really are easy to whip up. We regularly make them for breakfast, lunch, or dinner. ‘Cause breakfast for dinner is how we roll, yo.
And I’m not really in to making things that are complicated, unless they contain copious amounts of dark chocolate… and I don’t have to share them with my many kids. I know, I’m a wonderful mom. 😉
But I digress, I do love these pancakes…

Easy Yogurt & Applesauce Pancakes
Free of gluten, eggs, and sugar, with dairy-free option.
Preheat skillet over med-low heat. Whisk together dry ingredients and set aside. Combine remaining ingredients and add in dry ones. Mix until thoroughly combined. Spoon by 1/4 cupfuls onto hot skillet and bake until bubbly. Flip and bake until browned.
