{Homemade Peppermint Hot Cocoa}

Free of grain, gluten, eggs, and dairy, with sugar free option.
1/3 c. evaporated cane juice or honey

1/2 c. cocoa powder
1/2 c. water
4 c. milk of choice (I like to use my homemade coconut milk)
1 t. vanilla (I like to make my own!)
1/2 t. peppermint extract

Combine sugar and cocoa in a medium saucepan. Whisk in water and bring to a boil over medium heat, stirring constantly. When mixture starts to boil add milk. Heat through, but don’t boil! Remove from heat and stir in vanilla and peppermint. Serve with marshmallows or whipped cream on top.

Makes 4 servings.
