Peanut Butter & Banana Pancakes {Gluten, Egg & Sugar Free}

1 large banana
1/3 c. peanut butter
1/4 c. water
1/2 t. guar gum
1 c. milk
1 c. rice flour
2 T. tapioca flour
1/4 c. cornstarch
1/2 t. baking soda
1 1/2 t. baking powder

Preheat lightly greased skilled over medium heat. Mash banana and add water and peanut butter. Mix well and sprinkle guar gum on top. Stir in. Add milk and stir to combine. In separate bowl combine remaining ingredients and stir in to banana mixture until well combined. Let set for a few minutes until risen. Pour 1/4 cupfuls onto hot skillet and cook until lightly browned – flip and repeat.
