Creamy or chunky, I love that it’s savory, and easy to make. While more traditional chilies are delicious, and throw everything from the fridge in the pot ones are great too, white chili is one of my family’s favorites.
 
I love that it can be easily made in the crock-pot, as well. Stick it in the slow-cooker in the morning, and it’s ready for lunch. Or stick in at lunch time, and it’s ready for dinner.

Ingredients
  1. 1/2 lb. navy or great northern beans, pre-soaked (I like to sprout mine first)
  2. 3 c. leftover chicken meat, cut into 1/2 inch cubes or shredded (about 2 chicken breasts)
  3. 1 3/4 c. chicken broth
  4. 1 small can (4 oz.) chopped green chilies
  5. 1 t. salt
  6. 1 t. cumin
  7. 1/2 t. pepper
  8. 1/4 t. cayenne pepper
  9. 1/2 t. oregano
  10. 1 c. sour cream
  11. 1/4 c. whole milk (optional, depending on how thick you like your chili)
Instructions
  1. Drain beans and rinse thoroughly.
  2. Place all ingredients except the sour cream and milk in a slow cooker and stir until combined.
  3. Cook on high for 5-6 hours, or until beans are tender.
  4. Turn slow cooker off and stir in sour cream and milk.
Notes
  1. Cooking time may be less if using canned beans.
