Garlic & Parmesan Mashed Potatoes by Raia's Recipes

{Garlic & Parmesan Mashed Potatoes}
Free of grain & gluten.

8 russet potatoes
2 t. gluten free chicken base (or cook the potatoes in stock)
1/2 c. butter, cubed
1/3 c. whole milk
1 c. sour cream
1 – 1 1/2 c. Parmesan cheese
2 t. salt (or to taste)
1 t. garlic salt
1 T. parsley (optional)

Wash and dice potatoes (leave the skins on). Place in large pot and just cover with water. Add chicken base. Boil for about 1/2 hour, or until they crumble when pierced with a fork. Drain potatoes, leaving just a little of the water in the bottom of the pot. Add milk and butter. Mash with a potato masher or hand beaters. Add remaining ingredients and mix until well creamed. Serve hot.
